Living dairy free is hard in todays world where almost everything good contains milk and where milk is even disguised under other names like whey, casein, and ghee to name a few I've found a wonderful recipe that works great for dairy free living!
This soup is creamy and with all the veggies a very healthy meal its excellent for winter days or nights! Now I like alot of volume in my soup I want to feel like I'm eating a meal not an appetizer, I also used Rice Dream a milk alternative made with rice and enriched with vitamins (Rice Dream info) you can always try this out with other milk substitutes like hemp, coconut, or almond but it will be trial and error for those types of dairy free milks or you could go on ahead and use normal milk if you have no restrictions!
Makes a serving for 2 - 4 people
3 potatoes peeled and diced
2 Celery stalks diced
2 Carrot large peeled and diced
1 Tbs vegan butter
1/2 c. Rice milk (or other dairy free milk)
1/2c. of whole corn (drained)
1/2 onion diced ( place in fridge over night of freezer for at least 40min to prevent or lessen tears!)
1 Tbs all purpose flour
Salt
Pepper
Combine the pealed and dice vegetables in a pot and cover with water. Bring to a boil. Reduce heat, cover, and simmer at least 20min.
Mix butter, rice milk, and flour into a second smaller pot (for a thicker sauce I trippled the measurments you see above) stir until smooth and it begins to thicken up to the level you'd want then pour this mixuture into the veggie pot and stir continue to simmer. Add two dashes of peper and because the rice milk will add a sweet flavor you then just taste and salt till it goes away and until you like the salt level.
Lastly drain the corn ( I also like corn so I just drain and place a 1cup into my soup) bring it up to a simmer again let the corn cook in for a few moments and then done!
I make this soup for non vegan family members and they enjoy it!
